Hello,
My name is Michael and I have about fifteen years of food service experience. Of that fifteen years six are in a management position and three others are in lead positions in different locations around the restaurant. A little over one and half years of that time are in General Management. I have had the opportunity to work in both front of house areas with guest facing experience and back of house positions with food facing experience. My time has been primarily in smaller restaurants (15-40 employees) and in larger corporate restaurants (40-80 employees).
I was a web developer for a small company for a while when I needed a break from the food industry. I had a small clientele of websites and a few apps under my belt when I decided to return to restaurants. I just missed the constant interaction that you get in a restaurant. I also missed discussing my favorite topics, for example: food, alcohol and service. This experience allowed me to interact confidently with the IT professionals that worked at/for many of the restaurants that I have worked in.
I also worked in banking for about four years. This was a customer facing sales position and regularly allowed me to help people understand what they were should expect from their banking experience. While I enjoyed all of the interaction this position afforded me, whether personal banking or managing others, I ultimately decided this industry was not for me.
With myself all out there now I can move onto my current passion. This blog’s creation was for the development of tools, thoughts and ideas about running restaurants successfully. I will be specifically writing for the sake of the small restaurants and locations, both owners and managers, and attempting to share what I have learned over the years. There are many ways to run a restaurant, almost as many as there are concepts in the world. My primary goal is to communicate the thought processes that have lead me to success and the actions that have lead to my failures in the past. Secondarily to develop and discuss a few tools that would have helped me do my job more efficiently and therefore allow me to get more done.
